
QUICK CUCUMBER KIMCHI
Ingredients
- 1 cucumber
- 1 tsp salt
- 1 tsp sugar
- 1 Spring onion, chopped
- 1 tsp fish sauce
- 1 tsp Grated Ginger
- 1 tsp Gochujang paste
- 1 tsp Chinese Rice Vinegar
Instructions

- Grate the cucumber and add to a bowl
- Add the rest of the ingredients and mix well
- Leave the flavours to infuse in a clean mason or preserving jar for 3-4 hours
